Egg and tuna curry. This one is inspired by an Indian street food from Mumbai and Pune: Anda Ghotala.

ingredients
For 3 portions.
- 3 eggs
- 1 cup onions
- 1 cup peppers
- 1 cup tomato puree
- 2 cans of tuna
- 1tbsp garlic
- 1tbsp ginger
- 1tsp chilli powder
- 1tsp cumin powder
- 2tsp coriander powder
- 1tsp salt
- 1tbsp curry powder
steps
- Fry onions with ginger-garlic-salt and peppers in the pan
- Once fried, add all the remaining spices and fry till aromatic
- Add 2 cans of tuna
- After the tuna’s cooked and coated, add the tomato puree and let it simmer for 5mins
- Break 2 eggs in the pan and mix rapidly at high flame, such that the sauce thickens
- In a separate pan, fry a sunny-side-up egg
- Add the fried egg to the curry and break it into little pieces with the spatula
- It is ready to be served with some toast
