Egg and tuna curry

Egg and tuna curry. This one is inspired by an Indian street food from Mumbai and Pune: Anda Ghotala.

ingredients 

For 3 portions. 

steps

  1. Fry onions with ginger-garlic-salt and peppers in the pan
  2. Once fried, add all the remaining spices and fry till aromatic
  3. Add 2 cans of tuna
  4. After the tuna’s cooked and coated, add the tomato puree and let it simmer for 5mins
  5. Break 2 eggs in the pan and mix rapidly at high flame, such that the sauce thickens
  6. In a separate pan, fry a sunny-side-up egg
  7. Add the fried egg to the curry and break it into little pieces with the spatula
  8. It is ready to be served with some toast
